I make this chili all the time! Delicious, I followed the comments & left out the water, used a scant 1/2 tsp of chili powder & medium salsa, great addition to my Meatless Mondays recipes! I used kidney beans instead of black beans, and served it with quinoa and crisps. We served it over brown rice to make a complete protein. I do not have an instant pot, so we used the stove top but it still ended up perfect. This has become my go-to chili recipe. My favorite toppings include hot sauce, red onion, avocado and a few tortilla chips. Add 1 can veggie stock, some water, 1 can tomato sauce, 1 can drained and rinsed black beans, 1 can drained and rinsed kidney beans. I add those and the guacamole and cilantro (baby steps). I used an organic spicy apple salsa and I’m going to also add corn! I appreciate the simplicity and speed of this recipe and the others you publish.
